From Latin America to Asia, via the Mediterranean, we fuse each influence with respect and creativity using our personal oven-baking technique, creating experiences that awaken emotions and tell stories with every bite.

Fusion of cultures in unique spaces

We don’t copy recipes. We don’t imitate traditions. We build bridges between cultures.

Every culinary influence we develop at La Alcoba stems from a deep respect for the traditional techniques of Mediterranean, Latin, Arabic and Asian cuisine. For all of them, our ovens become the meeting place where these traditions merge, giving rise to unique flavours that you will only find here.

Mediterranean fusion

Products from the Mare Nostrum cooked in the oven using traditional techniques. Ingredients such as olive oil, fresh fish and local sausages create a fusion of flavours that connect with our Catalan roots.

Arabic & Moroccan fusion

Maghreb techniques applied to the oven with ingredients such as tahini, muhammara and traditional spices. We create hummus with roast lamb, aubergine and tomato zaalouk, Turkish toast with tzatziki, and fattoush salad with Syrian bread.

The oven intensifies these spices without burning them, developing their aromatic complexity.

Oriental and Asian Fusion

We oven-bake Asian ingredients such as miso, wakame, sesame and teriyaki to develop their natural umami. We create prawn and pancetta baos, sea bass tiraditos, chicken satay and our miso toasts, combining Oriental techniques with local products.

The heat of the oven caramelises the sugars in the teriyaki and concentrates the flavours of the miso without spoiling them.

Spanish and Catalan fusion

The best of our land is oven-baked to enhance its traditional flavours. Iberian ham, cecina de León, longaniza del Bruc, Catalan cheeses such as Les Cuines and El Farcell de la Frasera, Cantabrian anchovies, mel y mató, and our coca de cristal with La Vera paprika.

The oven enhances these peninsular flavours without masking them, from Iberian pork shoulder to cured Manchego cheese.

At La Alcoba, we are passionate about oven cooking because it allows us to achieve the flavours we seek to offer. This technique concentrates aromas, intensifies spices without burning them, and develops textures that are impossible to achieve with other cooking methods.
